I'd try to do it earlier than November, or it's going to feel closer to winter than fall in the mountains.
Vermont is beautiful, can't recommend it enough. Some of the best breweries in the country to boot.
Areas to visit include Burlington, Stowe, and Woodstock.
Breweries are countless, but the big ones are:
Lawson's
Hill Farmstead
Alchemist

We are definitely planning on early November. Actually, I was thinking late October and trying to stay a night in Salem on Halloween. Then, heading to Vermont after.

I'm headed to the Stowe area next week on Thursday before a wedding on Saturday.
Any can't miss beer/food/hikes. Those that you listed are already on my radar.
