I will give you three recommendations. I have been to about 20 different all inclusive.
Secrets Maroma Beach - Fantastic place. I did a trip review last year here.

Iberostar Grand Bavaro Punta Cana - Great resort. Been here 6 times. Adult Only, great food. Very relaxing. Top notch
Excellence Punta Cana - Once again a great adult only. Relaxing and not extremely crowded. Great grounds with fantastic gym, outdoor equipment and rooms

We went to Calabash cove in St Lucia for our honeymoon and it was absolutely fantastic. It's a smaller resort (I think we were one of like 5 couples there the entire week), so the staff really takes care of you. LINK

Live aqua of in Cancun was fantastic. We are going to Hyatt Zilara in Montego Bay in 2 months.

I'll throw in another vote for excellence el Carmen. Great resort. It's new and occupancy is low.
