Portugal and Spain

I will be travelling to Portugal and Spain in early June. I travel with a college group, which is primarily art students. We have an itinerary, which I like, but we also have free days.
Any suggestions of things to do on my free days in or around these areas? Any recommendations on places to eat or things that aren't the big attractions that are fun? I enjoy nice dining, but does not have to be fine dinning. I'm okay with a hole in the wall that has awesome food or atmosphere.
The only thing on my radar in terms of "extra" is I'm looking at possibly taking a train from Lisbon to Sintra for a day trip. I know nothing about it though, it just looks like a really nice place. I also booked tickets to a flamenco show and dinner as Casa Patas in Madrid.
Lisbon - 5 days - Will Visit Fatima, Quelez, Obidos, Tomar, Nazare, Batalha
Merida - 1 day - Will visit Evora
Madrid - 4 days - Will Visit Toledo
Barcelona - 4 days -

Madrid is not that great if you can get out a night or 2 there take a train to San Sabastian from there hit up barcelona
When In Barcelona avoid the overran beaches around the city and travel a little ways to Sitges beaches - more secluded and the women watching is not bad either.

Thanks, I can't really alter the itinerary, but I can do day trips on free time. Looks like taking a cab to Sitges would be a good plan. Hopefully it will be warm enough for beach in early June!

I'm going to Lisbon tomorrow, I'll try to remember to report back what I did and I recommend.
I'm definitely going out to Sintra and Cascais though.

Closing in on less than 2 weeks until I leave for Portugal and Spain. As I said in OP, most of the trip is planned, but I do have a number of open days left. I have a Friday in Lisbon, a Friday in Madrid, and a Tuesday (day before return home)in Barcelona left open with nothing planned.
I've had a few suggestions like Sintra from Lisbon, Kayaking and Fort St. John tour out of Lisbon, and Beach in Barcelona. Any other suggestions? I haven't wanted to actually book any type of excursions on those days, as I would prefer the flexibility to do whatever came up on those days.

I'll be doing Portugal in July. Azores > Porto > Lisbon with stops in Braga, Coimbra, Fatima (maybe), Tomar, and Sintra.
Post a review when you get back. Our itinerary is pretty set, but I'd like to hear some recommendations for Lisbon area.

Absolutely. I take pictures of all bottles of wine and all restaurants I eat at, so in addition to things to do, I usually have a good log of things and places to eat!

Doing 12 days in early August: Lisbon, Cascais, Porto, Douro Valley, Porto, and back to Lisbon.
Will also be popping into Sintra.

Sevilla is one of my favorite cities in the world. It's not a bad train ride from Madrid if you want to get out of the big city for a night or two.
