I've caught them slow rolling a heavy spinnerbait through milfoil, and pulling a Carolina rig, if the milfoil is spotty. Hydrilla I've had luck fishing was a lot thicker, needing almost a punching technique with a heavy jig, or fishing along the outside.
Matted hydrilla is my favorite way to catch them. Done it successfully on Caddo, Rayburn, and Kincaid many years ago.

Same for me. I grew up on Lake Guntersville, where hydrilla used to be very prominent. Punching through it was was usually successful. I moved out here to Texas a few years ago, and there a lot more milfoil and they don't like it as much. My guess is it has to do with oxygen levels in the water, and hydrilla provides more cover from prey.

Several years ago there was some really good hydrilla at the south end of government ditch. Combining that with the current that flows through there used to hold a massive amount of fish. Never caught anything over 5.5 but man there were a bunch of fish in there.
