Lily Pad Lake in Silverthorne if you want to nab something in the mountains. Very mellow. Minimal elevation gain.
Ten Mile Creek in Frisco also is mellow and a good stroll to get out in the mountains. We didn't hike the whole thing, but there are some cool open meadows and spots along the creek.
Both those are close to Breck if ya get up early before the rest of the group and wanna go for a quick stroll.
Drive over Swan Mountain Road between Breck and Keystone. Stop at Saphire Point and enjoy the views of Lake Dillon, the Ten Mile Range, and Gore Range.

Just reading this thread makes me want to plan a hiking trip to colorado
