A buddy and I boiled a little more than 300 lbs. for a birthday party once. It was 12 sacks.
We ran 3 pots, boiled 2 rounds, dumped water and boiled another 2 rounds in all 3 pots. It wasn't a huge undertaking, and I like cooking them.
Hell, half the party stood around the cooking area most of the time.

As said, if you have a large crowd people usually eat less crawfish. Small parties is when the family posts up and goes to town. I'd tell the ladies to bring extra sides, and just do 3#s per person and do it yourself. Easiest for everyone imo.
