I have been going once or twice a year for 15 years for conventions and I don't care if I ever go back to Vegas.
Things I have found---The Golden Nugget is an excellent value and has good rooms and restaurants including Vic and Anthony's. If you are going to gamble it is as good as any place.
Westwood--former LVH, former Hilton--next to the convention center is HORRIBLE.
If in town for business stay at a Hampton Inn or Embassy Suites or something. You check in quick, WiFI is free and no resort fees. Embassy Suites next to the convention center has breakfast and evening happy hour included in your room.
I rent cars instead of taking taxis--they are cheap in Vegas and you don't have to stand in that taxi line at the airport. Almost all the major hotels will stamp your parking tickets.
Southwest is the best airline in and out of Vegas.
I hate the big hotels like the MGM---takes forever to check in, resort fees, wifi fees, loud, long walks just to get in and out.
Driving a car at the international speedway or shooting machine guns at one of the shooting places is something you ought to do once.
I prefer to go to the Grand Canyon from Arizona.
