Please give us your process. I have one that size in the freezer to cook when my brother visits. Trapped it and his mother. Mom was about 175 lbs. Got plenty of meat off her.

Brine in cooler overnight. Rub with smoked paprika, salt, black pepper, puree garlic. Smoke at 225 for 10-10.5 hrs.
