I am so confused by all of these diets. Some say don't eat certain foods that we grew thinking were good for you while others say eat plenty. Is there no real agreements on what is good and what is bad?

Most important thing is to find something you can follow and stick with. For me, it's keto.

It's been a lifestyle change, and I've eaten this way for ~2.5 years (1 year real strict, then lazy keto style maintenance). Lost 85 lbs in the 1st year and have kept it off.

Yea there is agreement. If it's processed it's not good for you as it causes inflammation which in turn causes cholesterol to rise specifically ldl.

And what sounds horrible about whole30? That you can't eat processed crap and can't drink? Honestly what is so horrible about eating steak and asparagus for lunch, steak and eggs for breakfast and some grilled shrimp with veggies? Honestly you should do some soul searching if you think it's horrible sounding.

You asked for a diet for specific health results, whole 30 is that diet. If you don't want to do the diet, that's fine but it is the best diet for the results you are looking for.
