Why? That game was easy to get all the coins. That game didn't even entertain me for a week, needed a lot more content.

Nintendo says they plan on releasing 2-4 mobile games a year so it won't be long

Never
You could make a case that Mario Kart is Nintendo's top console franchise right now and 2nd overall to Pokemon. Mario Kart on the Wii, 3DS and Wii U was the top selling Mario title.

Yeah, I don't see Mario Kart making a good mobile game anyway. What would they do to counteract the impreciseness of touch controls? Turn it into some kind of Temple Run-esque 3D endless runner?
We're going to see more turn-based games, such as Fire Emblem Heroes, and games with simplified input before we see anything remotely like Mario Kart.
I'm thinking a Donkey Kong Country "Run" type of game and / or maybe a Mario RPG / Paper Mario title. I could also see a new turn-based Metroid game in the same vein as Lara Croft Go.

Has it been a big success though?

Super Mario Run, Nintendo's first mobile game, was supposed to be a smashing success. But although it's hit 78 million since its December 15 release on the iPhone last year, only 5 percent of players paid the $10, £8 0r AU$15 to unlock the full game, Bloomberg reported. (Get Nintendo's full earnings report here.) The 5 percent figure is about half as many paying users as Nintendo had estimated. Nintendo made 6 billion yen (that's about $53, £42 or AU$70 million) from Super Mario Run, but that number could have doubled if it hit its target. Last summer's hit, Pokemon Go -- which Nintendo didn't make, but gets a small slice of -- generated over $143 million and was downloaded 32 million times in its first month on the iOS App Store.
