Grilled salmon.....grill enough to eat for 3 days. Make salmon tacos, salmon burgers or smoked salmon pasta with the leftovers.

Falafel wraps w/ home made baba ganoush

Kimchi fried rice w/ roasted Brussels sprouts and shrimp.

pasta primevera

New Mexico style stacked veggie enchiladas (red and/or green sauce).

Lentil crispy tacos

Veggie tacos (port. mushrooms, zucchini, onion, carrot) w/ a ginger and lime aioli.

Winter time I'll add:
Pinto Beans & Rice
Veggie Chili
Veggie/ green chili Pasoloe
Veggie soup

I do your salmon thing but with brisket.

Brisket
Brisket sandwiches w Chiabatta break
Chopped brisket on baked potatoes.
