He lost $100. You are trying to find out how much she stole in your narrative, which is not what the question asked. The owner lost the initial $100. The thief got $30 plus the groceries, but that's not what is being asked.

Obviously not, that $100 is gone.
Let me see if this makes it simpler. I pay $10 for a widget and sell it for $100. You steal $100 from me and buy the widget. Now I have $100 in my pocket, just like before you stole it and I'm out a $10 widget. I've only lost $10 and my time explaining to you how I only lost $10.
Of course for insurance purposes I'm claiming that $100.

If store has solid rotation ordering process no sales were missed.

none of that matters. The original thief taking the $100 is confusing the hell out of yall. Take him out of the picture...he takes the money and runs. The NEXT customer buys $70 worth of food and gets $30 in change (no loss to store as it is a normal operation)...the register is still short the $100 the thief stole.
