Butternut squash recipes?

What's your favorite? Got some butternuts I need to use before they go bad.

Use this John Besh recipe for Pumpkin Soup. Just substitute butternut squash instead of pumpkin.
Made some last night. Family always loves it.

I made a soup last week with butternut sqaush. No recipe, but it consisted of the following:
butternet squash (cubed), ground turkey, onion, mushroom, bell pepper, spinach, brown rice, chicken stock. Great leftovers and good for these cold days.

Cube the squash.
Heat up a bit of Ghee and add some chopped sage to it.
Toss the cube squash in the sage infused ghee.
Salt and pepper.
Roast in oven in foil lined sheet pan at 450F for 30 minutes.
Enjoy!

They are pretty close to a sweet potato to me, I haven't messed with them a bunch we had it the other night and just roasted it. Turned out great. But I feel like it would be a great substitute to a sweet potato in most recipes.
