Making fried rice this weekend - what is best cut of pork to use?

Recipe calls for Black Forest ham but didn't know if anyone had a better idea. NOTE: I am not going to use sous vide to precook the pork. Other suggestions are welcome!

I've always found that fried rice comes out the best if you use leftover rice and leftover meat. Anytime I cook the rice and meat specifically for the fried rice, it doesn't taste the same.

Agree, cook rice at least a day in advance. Leftover ham works well. Spam works surprisingly well also. Spam fried rice is probably my favorite of all that I have had.

I like country ham or porkchops. Not sure which I like better.

Try some temple meat, that's about TH best to use in jambalaya. Should be just as good in fried rice
