Not sure if it qualifies as a "drastic" position change, but moving Eric Alexander from safety, where he was buried on the depth chart to linebacker worked very well for him.
He started, and was even drafted by an NFL team, as I recall.
That was a number of years ago, and maybe others have changed positions since that time, but I do not recall them achieving that level of success.

Old timers- didn't we have a QB back in the 70s that converted to LB his senior year and started ?
I seem to recall - I believe he was from Alexandria.
