What is the difference between Apple TV, Firestick and Chromecast?

Out of those options I'd say the Apple TV but you should also consider a fire TV, roku, or android box. If you open it up to those other options "best" is subjective based on how you plan to use the device.

You are comparing two sticks to a box. So naturally the apple tv is probably the best bet there. Not really comparing apples and oranges.

One you didn't list: FireTV box.
I have all of the streaming devices and this one has it all.
Fast processor, plenty of RAM, Ethernet connection, has an app for all the streaming services and the ability to add Kodi to it.
Firetv Stick is the next best.

Generally Boxes > Sticks, I've seen a lot of complaints on this board about performance issues with the cheaper sticks.
They all do more or less the same thing but each platform has it's negatives.
Chromecast - Doesn't come with a remote, it requires an app to control it. Some people don't mind, but this is a deal breaker for me as sometimes I'm busy doing other things on my phone or it's in another room charging.
Fire - Appears to be the platform of choice for Piracy. For people that steal content like it's not even stealing, a FireTV box with Kodi installed is the tool of choice here.
Apple - The main benefit are its ties into the Apple Ecosystem and the ability to cast your iPhone/iPad/Mac screen to it. The main negative is it doesn't have Amazon Prime Video, although you can stream to it through the app on your iPhone/iPad.
Roku - It's been around the longest and isn't tied to any particular platform so it seems to get access to everything but iTunes (Apple is the only platform with access to iTunes). I also like the remote on some of the higher end models that come with a headphone jack. The main negative is no Kodi and it's seems to be getting put to the back of the line for new Apps. It still gets them, just not first. Like PlayStation Vue was out for a few months before the Roku App was ready.

But it isn't perfect, because no Kodi.
I have everything except Apple TV. I use Roku for my heavy lifting streaming. I have a Firestick for Kodi (we're really just trying/learning Kodi with the Firestick). I have a Chromecast for travel. With a Chromecast, you use your phone or tablet to push content to the HDMI port - it doesn't do much of the lifting at all. Fire stick is also stunted, although it does fairly well for what it is.
Amazon also has Fire TV boxes comparable to Apple TV or Roku.
I said Roku at the top, but the really best for all around use is a HTPC. That's more than most people want and overkill for mere streaming.

If you have a good router I'd suggest the fire stick
I don't have issues with the new one
Getting kodi on the fire stick or fire tv is cool but I really just use my own Plex media server and Netflix mostly
