re: Pork Chops??

I like to take a thick cut PC, stick a knife in the edge away from the bone till I hit the bone then make a pocket inside but only leaving the small original insertion point (similar to, but different from, butterflying them).

Stuff that pocket full of whatever else ya got on hand: mushrooms, cheese, fresh spinach....etc.. Season outsides with garlic, black pepper..... Grill as normal.

Voila, stuffed PC
