Because Florida didn't give a shite about playing Louisville. LSU fans show up the night before or day of the game. Florida and Auburn fans stay the entire week. Tickets are the least of their worries, it's the tourism that matters. LSU fans don't really bring much to the table since it's mostly Louisiana residents

They didn't care about Louisville obviously, but the Sugar Bowl has only had four games that didn't get at least 70,000 fans this century and UF played in 3 of them (one of them against one of their major rivals - Miami).
LSU fans show up well before the night before or the day of the game, it's just that so many more show up when the game nears that it's noticeable. When other teams come, only those with tickets are basically showing up. When LSU goes, you have all of those with tickets and tons of other LSU fans without tickets spending money around the city. The Sugar Bowl benefits directly from tickets sold and concessions. The city benefits more from the other stuff. The Sugar Bowl CEO said Sugar Bowls with LSU have given them great results and he said what LSU fans spend at restaurants and around the city makes up for any difference in hotel bookings from out of state teams.
