First, I would save up some more money for an emergency. But that's just me. If you feel fine with that, then go to retirement.
Not sure what you opened up for $25 at vanguard.
You basically open up the Roth target date with $1000. Then you can contribute up to the 5500 a year.
Best thing you can do though is call vanguard and tell them what you want.
I have called before about some stuff and they are quite helpful.

I just went through the online thing to create a roth ira account? I don't know what I opened up either...that's kinda why I'm questioning. I kind of always thought I just had to put the money in the account and let it sit there...but it seems I need to choose how to invest that money?
I'm comfortable with the 5k for now. I live with my girlfriend in an apartment where my share of rent is only $300 and I no longer have any debt, so I think that would hold me over for a while if needed.
