This is how I felt before wrapping. They were good but never how I wanted them. When I used to do them in the oven (steamed) they would fall off the bone...so I decided to wrap and I wont look back now.
Fall off the bone is technically overcooked. You want ribs where you take a bite with little to no resistance with the meat staying on the bone. That is a perfectly cooked rib.
Now, I would much rather over my ribs overcooked (fall of the bone) than undercooked (tough and chewy). So if you were to error on the side of caution overcooked is the way to go I guess.

I don't enjoy fall off the bone ribs. Why bother cooking the meat on the bone if you're going to cook them into oblivian?

Completely agree. I don't like to pick up a rib, take a bite and have the rest of the rib meat fall back to the plate.

Mine come out perfect and everybody raves about them and they don't fall off the bone. I don't mind fall of the bone ribs, but hate that most people think that is how they are supposed to be.

I prefer to have a clean bite rib to a fall off the bone rib.

I have "read" that its overcooked and wrong to have them fall off but I prefer it like that. I prefer to just peal the meat off and toss a clean bone onto the plate and enjoy my rib meat rather than ganaw on the bone.

My two terriers really appreciate it as well. toss a clean bone

You can have a clean bone very easily without having them fall off of it.
