Yeah, Jambalaya is inherently not a quality item at any restaurant due to the time it takes to cook, and the inability to refrigerate/freeze and re-serve.

That's very true what you say about jambalaya...You can get some good Gumbo and fried seafood at a variety of places in BR, but I've yet to find a BR restaurant that makes a really good etouffee.
