Not knowing your interests makes it difficult to recommend sights, but the Deutsches Museum is definitely worth your time and was relatively unknown to me before I went. If you're a World War II buff you'll dig the aviation exhibit, which houses one of the last ME-262s as well as a complete V-2 rocket and a US made F104 Starfighter sold to the Luftwaffe. Also, what pieces they were able to recover of the Red Baron's Fokker Dr. 1 triplane have been cobbled together with replacements and are displayed there. Tons of early BMW and Mercedes cars and motorcycles as well. I know you said "besides touristy" but I really couldn't recommend the Hofbrau Haus enough, it's impossible to not be happy in that place.
If you want to get out of the city, Berchtesgaden and Hitler's Eagle's Nest are only a relatively short train ride away. Definitely worth seeing if you have the time. Also, if you're a single man the brothels aren't half bad either haha though you have to catch a U-Bahn ride out of the city's historic district to get to them.
