Being pork loin which didn't have a whole lot of fat I didn't want to overdo it and dry it out.

Need to brown pork close to 45 minutes. Not gonna dry out, once the water goes in and starts boiling, the color and flavor releases and the pork softens back up and tenderizes in minutes.

Gotta split that rice, though!
