One of my favorites is "Down Home Girl." LINK
For most bands, the drummer is the "conductor" per se, but with the Stones, it's always been Keith, so you'll hear an occasional stutter from Charlie as he tries to figure out what the hell Keith is doing so he can keep time, and this is a great example. Great lick by Keith, stutter step by Charlie, then a dirty song.

Hard to beat. That song is bookended by the great Stones' guitarists - Keith at the beginning with the basic, blues derived riff, and Mick Taylor keeping it going at the end when everyone wanted to quit - (pardon the pun) rolling into an extended jam session to rival the Dead or the ABB. Musical moments like that can't happen anymore because of the industrialization/homogenization of music, the relative lack of virtuosity, and the fact they just don't make music in that fashion any longer.
But, it's great to look/listen back on those times. What a glorious time to have been a rock and roll fan.
