"Asian" -- what does this word mean to you?

We commonly (and generally) refer to the folks of SE Asia, along with the accompanying cuisine, as "Asian".
By means of geography and textbooks, Asia is a HUGE continent that spans many countries, races and cultures. How have we come to identify the Oriental populous/food/culture as "Asian" ?
We have an intern at work who is from Mongolia and is vehemently adamant to declare she is Mongolian....not Asian.

No different that someone from Brazil wanting to be called Brazilian instead of South American. The culture and language is clearly unique within the continent and they want it to be distinguished.

"By means of geography and textbooks" is a funny phrase. This sounds like the beginning of a very bad freshman paper.

Asian = Person from East Asia (Korea, China, Japan, SE Asia)
Middle Eastern = Person from West Asia
Middle Eastern = Person from West Asia
