I believe you're right. Actually, I seem to remember reading that it's a type of salamander. We used to call them "lamp eels" when I was a kid. AND we found them in ditches, living in holes.

A lamprey is a jawless fish, and that is no fish.

This is the Southern Brook Lamprey which can be found in Louisiana:


I agree with the poster that suggested two-toed amphiuma. The two-toed amphiuma is an amphibian. For reference:
