Unless Chef Oi is serving you, lift up the fish next time you order nigiri in BR. My money says there's nothing under there.

I've never seen it done in BR outside of Yama. Didn't even know it was done like that until I went to Japan.

Number 3 is not true, what is true is they dip the fish side in the soy and wasabi not the rice side

It's much easier and perfectly accepted to use your hands.

Sucks because that guy was regarded as one of the best in the city, if not the best

Damn. He made us some beautiful, delicious food. Now that I look back, the last time I went he hardly had any drinks with me. He seemed to be eyeing management when he did finally take a shot.

Wouldn't recommend with inside out rolls because the rice will stick to your fingers. It's accepted though.

My uncle, who regularly sits at his section of the bar, told me he thinks he got into some disagreement with management and was shown the door.
Heard the same. Haven't heard about where he ended up, but some of my friends were very close to him and would likely know. I'll see what they say.

Yep. I'm going out for sushi and tempura tonight and the quagmire will be made.

Sitting at the sushi bar and NOT ordering sushi
That's just common sense. And don't sit at a restaurant bar just to get food.

I don't know. Ive seen local Japanese using their hands and chopsticks to eat nigiri in Japan, and respecting tradition is pretty important to them. So I'm not sure how accurate that is or if they've become lax on that tradition. I personally do both.

Yes, my friends get mad at me when I tell them they are being rude. It's why I only sit at the sushi bar when I'm alone.

Several restaurants do give you something that looks like that if you ask specifically for real wasabi.. and Google Images pulls up several images like that when you search "fresh wasabi".. so I wonder what it is Obviously not horseradish since the default stuff they give you is horseradish, and it is definitely hot, so it is something.

I'm happy to follow these rules if I am ever in Japan. I doubt the crappy little NOLA sushi places care.

Fresh wasabi looks similar to the shite they give you normally. It's a little "wetter" but not like that picture.
