Every time I watch these, I get slightly confused with that crosshair and where the rounds actually hit. I'm assuming that's just the camera?

Yeah FLIR camera is not boresighted IIRC. The gunsight is different.

Let me preface this by saying I was an AH-64D/E pilot for 6 years. There is alot to the ballistics of the round that could cause that type of dispersion. Secondly any pressure on the thumb force controller while firing causes the weapons processor to anticipate your movement. These are very dumbed down terms to help you understand.
