I don't know about this whole gluten allergy thing either. I agree with OP. I think its a fad.

Man, how did so many of y'all survive in a world of scary gluten before you knew gluten was the cause of all of life's problems.

Y'all don't think that maybe the gluten thing is a little overblown?

They have been increasing the amount of gluten in products for years. It is a protein binder. They passed a threshold where a segment of the population began developing hypersensitivity to it. The bread we eat today is vastly different than what they were making 40 years ago.
