This is the part that I flat refuse to do.

Basically, I would have paid X months of the phone cost, but then have to give the phone back to you in order to upgrade.

So, I effectively bought 70% the phone, but I'm going to give it back to you for free for the right to upgrade sooner?

Hell no. That's a rental, not a purchase. Unless I'm getting a portion of the money as a credit toward the cost of my next phone, I'll pay the phone off, keep it, and upgrade later.

But just imagine all the idiots who don't look at it this way and can't wait another second to get the latest phone. They will make a ton of money off of these suckers. But people with just marginal common sense will save money.

So it's basically a win for both AT&T and people with common sense

Correct, it's an offer that appeals to poor people. People with sense will treat it like free financing and pay the phone off.
