Agree with you on the boudin balls at Billy's. Tried their cracklins and was underwhelmed. But their smoked boudin is near the top of my list. And the boudin egg rolls with pepper jack cheese are killer when fresh. But my overall favorite for boudin and cracklins is still Billeaud's in Broussard.
Don's boudin is good but tends to pack a little more heat than most. If you like yours extra spicy, this is your place. Their cracklins are good too.

I would say boudin and fresh sausage from Nunu's.

Not many will agree, but it's my top place. We used to get links pretty much every weekend from the Carencro location in my youth.
