Is grinding the inside smooth a typical practice? I know most pots will get there naturally over time.

Nope, and it's dangerous to do if you don't have the right PPE LINK.
All the old school cast iron was machined smooth and that's a reason people vastly prefer it the newer stuff. If you are going to be using it the rest of your life, it's not much of time to invest to make it much better.
