Favorite duck recipes?

I normally only get Woodies around here. I like to grill the fileted breasts. I normally marinate them in seasame oil, ginger and garlic. Give me some more ideas. Killed 2 deer so far, so I am about ready to shoot some ducks. TIA

I'll be in a blind in the morning. Getting a wet arse I'm sure but I like hunting in this weather-wish it was 20 degrees cooler.
Pot roast a couple of whole ducks. Season, dust in flour, bit of oil, brown all sides, deglaze pot with water, wine or stock, cover and put in 350 oven for a couple hours checking every 20 minutes or so adding liquid as needed.
Remove, skim fat and serve with pan juice over rice.
And you can add whatever from there. Onions, mushrooms, celery, peppers, carrots, potatoes etc...

I hate to cite a cookbook you probably don't have, but I recently tried "ducks in olive gravy" from the cotton country cookbook (junior league of Monroe, LA). Fantastic.
You basically brown whole ducks, set aside. I used teal which created room for more gravy.
Your gravy starts by making a dark roux, add celery onion bell pepp garlic. Add a cup of sherry and some chicken stock as needed.
Return the ducks to the gravy, cook at 350 for 2. Add parsley and several handfuls of sliced green olives. Cook at 350 for another half hour. Serve over rice. Makes a ridiculous gravy.

We cook duck gumbo all the time. A cold day at the camp down at four bayou. It dont get no better!
