It's the thin film that gets scratched. That's what we are seeing when we see "scratches"

ETA: It's called an AR coating. And not all sapphire has it but some do.

On the helgray watch I posted they are adding the anti-reflective (AR) coating to the inside of the sapphire crystal so the film will not be scratched.
