If you don't know which breweries to visit in vermont, then you really don't know beer

Make sure to get a Maple Creamy while you're there. They are the shite.
***Lots of places sell them. They are not all created equal, but all are pretty good. Ask around and the locals will tell you where to go for the best ones.

Leaf watching depends on weather. Today feels like fall for the first time. Still a little early despite the goddamn leaves all over the '69 Mustang I just washed yesterday.
The big thing around here, for whatever reason, is Heady Topper beer but their place is not open to the public.
Otherwise, Hill Farmstead Brewery in Greensboro.

Northfield, VT

Southern VT or Northern VT?

It's a beautiful state. We spent better part of a week there last year.
I really like Waterbury. Some of the best craft beer bars in the country are packed into a roughly one block area. Prohibition Pig is the must stop in that area. It's a fantastic gastro pub.
Downtown Burlington near the square is a great area too. Several breweries and farm to table type establishments.
If you are a casual craft beer drinker you'll find all you need in Burlington and Waterbury. If you are a serious craft beer fan then the pilgrimage to Hill Farmstead Brewery is a must.
Heady Topper is the most famous beer in the area and people go crazy for it. Be sure to have at least one. For many years it was considered the best beer ok the planet. If you want a break from beer be sure to hit Citizen Cider in Burlington for locally produced hard ciders.
Finding scenic overlooks won't be hard. A day cruise of Lake Champlain is nice too.
Cheers...

The drive to Mount Snow up a winding road with a creek running on side of it is beautiful.

Ben & Jerry factory near Burlington is fun, esp if you have kids

Magic Hat and Long Trail for breweries. Leaves will all be green still probably.

Otter Creek Brewing Co.
Magic Hat
Harpoon
in that order.
Also, if you're near Middlebury/Vergennes (no idea why you would be here), head to the Red Mill. They're open late and it is a bunch of different employees from the Basin Harbor Club hanging out, they're all from different countries (Bulgaria, Russia, South Africa, England, Germany, etc.) and they have the best after parties.
For scenery, anywhere. The state is absolutely gorgeous. I've spent a total of 18 summers in Vermont, and if you have time, you'll find shite to do.
