to be honest, the the few gumbos I looked at in the TD cookbook are pretty underwhelming

In what way? A traditional gumbo doesn't have a whole lot of variation.






While on the topic, what does the FDB think of mixing seafood with meats? I don't do it, but this woman at my work was talking about the gumbo she had in her freezer and said, "We throw all the good stuff in it too. Chicken.. shrimp.. crab.. sausage.. pork.. "

I thought it was odd to combine the seafoods and meats.
