I just got back from that area. Made a trip with Ken from Endless River Adventures. About 2 miles from the NOC. He's the best around there. All along the Natahala is awesome trout fishing right now. Also the little Tennessee is great small mouth fishing. Go give Ken a shout, he'll put you on fish.

You guys won't be too far from Cherokee. They have a pay to fish trophy section over there if you want to catch some pretty much farm raised big trout. Not too far from the park either and a bunch of good spots over there. Oconaluftee off 441 has some trout in places. Bunch of hike in stuff. I usually go out more to Cashiers when I am on that side of the mountain fishing. Will try to get some more specific places for you.
Make sure to head into Franklin(except on Sunday/Monday they are closed) and eat at Caffe REL. it's in a gas station, but don't let that stop you.
