Homemade Mayo Recipes

Paul Pridhomme's La Kitchen has a number of good ones. Making a homemade mayo is simple, quick and much better than store bought. Here's a good one:
Procedure
1. Into the micro food processor went 1 clove of garlic,1 egg yolk,1/2 t red pepper,@ 2T of lemon juice, and @ 1 T of seasoned rice wine vinegar. (Use white vinegar for a little less tang)
2.Cut on the processor and streamed in, slowly, 1 cup Canola oil. Be sure and go very slow with the streaming...just a drizzle. You'll end up with an awesome mayo that will last several days in the fridge.

I've never done homemade mayo.
What's that recipe yield? How many sandwiches am I gonna have to make to keep from wasting it?

That'll make @ 1.5 cups, I think. You can use as a salad dressing, a spread, or a dip. It won't go to waste unless you want it to. And it's dirt cheap to make.

Ive been using a recipe from Jose Andres a lot lately, especially for grilled meats. Its very similar, but he uses a whole egg, garlic clove, lemon juice, salt, and olive oil. Using an immersion blender makes this super light almost fluffy aioli. Really dynamite with grilled lamb chops and rosemary.

I've been doing a whole egg of late as part of a Cousin's Creole Tomato knock off. Works great. Never used the immersion blender for this, but I will.

+1 on the both the olive oil and the immersion blender over the food processor. With a Bamix, homemade mayo is nearly as easy as opening a jar. Try using walnut or hazelnut oil for a nice change from olive.

That stuff is an amazing sauce for fish tacos in a pinch.

I'm thinking tomato, vidilia onion, bacon on Bunny bread with homemade mayo may be on the menu. Corn on the cob on the side.

Alton Brown's recipe is solid.
I love Vietnamese mayo, though.
1 cup canola oil
2 egg yolks
Salt to taste
Lime juice
Separate whites from yolks. Use chop sticks (my preference) and whisk eggs and slowly add oil, as with any mayo. When you've reached desired consistency, add lime juice and salt. Goes fricking great on bahn mi.
Here's one not from memory

Method
Put the egg yolks, salt, lemon juice, and vinegar in the food processor. Pulse 4 or 5 times to combine well.
Run the machine and pour the oil through the feed tube in a thin (less than ¼ inch wide), steady stream until completely incorporated. The mixture will thicken as the oil gets worked in, and the sputtering will diminish by the time the mixture becomes super thick and creamy. It should take 2 to 3 minutes to add the oil.

If you are going to make homemade mayor why make it healthier use light olive oil coconut oil or walnut oil
