I've had the dish with black pepper crab in southeast asia.
Ive seen it done to non seasoned crawfish. I had never seen it done to quality crawfish. It was a possibke game changer, though awful for you

There's one of those joints here in CO (pun intended). It was weird to say the least. Trying to peel them was a pain in the arse because they felt like they were dipped in KY.

Boil Water
Add Louisiana powder. Put garlic, onions, celery, lemons in crawfish sack and boil with potatoes. cook until potatoes are done. Remove all veggies.
Add crawfish, bring to boil until water froths on top. cut off gas.
Add Zatarain's liquid boil, frozen corn and return veggies to pot. Sometimes I add more powder. stir and let soak till they're right.

before the season ends, I am going to try to do my own seasoning just to give it a try but I was not messing with that experiment for 60 people I had over

Went to a boil of a guy from North Dakota. Should have known right there.
So - he boils broccoli in UNSEASONED water first. THEN - after removing the broccoli adds crawfish. Remember, UNSEASONED water. Cooks the crawfish for 15 minutes, removes from the water, dumps into an ice chest, adds WARM - NOT boiling water mixed with crawfish boil (powdered) and lets it sit in that water for 30 minutes. NEVER drained the water. He served them out of the water.
Tasted like crap. Green crap from the broccoli all over everything.
Could not believe what I was seeing. Tried to help the guy - finally just left shaking my head. The one that was most pissed was my son - he was craving some mud bugs bad!

he steamed these crawfish for a good ten minutes and they were not overcooked. Not saying he's right, but have you ever boiled crawfish in straight water to see how much they could handle?

not at all. I sometimes do it that way but I take out potatoes so they don't get scarred up.

I'm not sure if I understand. I edited my original post because I misunderstood the OP and that the old man was doing a steam method.
If you are asking if I know how long is too long for boiling crawfish, then I don't know the exact answer or "breaking point" where crawfish get overcooked and the meat breaks when you peel. I do know that they are cooked perfect after the water comes back to a full boil.

knew a dude from Mississippi who dumped the crawfish from the strainer into an ice chest and squirted yellow mustard all over them

I only use about 4 inches of water and steam my crawfish for 10 minutes. Super fast and good
Season about half way when adding crawfish then another layer on top
