Ok, maybe the best ethnic food comes from dives. I can honestly say that the vast majority of epic ethnic food experiences I have had throughout the USA have occurred in total dives.

Being in marketing the limited time I've been in it, I've realized there are some people who just flat out do not see the importance of advertising or creating an attractive environment beyond their product. Generally, they're passionate about their product and assume that will attract flocks of people.

Unfortunately, unless you are a divey ethnic hole-in-the-wall, you need at least SOME branding.. and you need good atmosphere. At least if you want the weekend crowds.
