Fried Chicken Spinoff

Recently went to Nashville to visit a friend and had some Hattie B's Hot Chicken:



The stuff is absurdly delicious and I'm going to try out the Bon Appétit recipe tomorrow. It calls for a dutch oven to fry, but I was thinking of using my cast iron instead. Any experts out there know if this will be a problem? See any other issues with the recipe that I could avoid?

Like a big cast iron pot? Is that not a dutch oven?

I have a feeling they actually intended (un-enameled) cast iron pot since enameled ones aren't supposed to be TOO hot.

so you take the fried chicken out of the oil, then brush it with spiced oil? wouldn't that just make everything super greasy?

I've heard this stuff is really good though so I'm still a bit tempted to try it

Nashville Hot Chicken is the way I now prefer fried chicken.

P.s. You should have went to Bolton's.
