Are they weighing the kegs or counting the pours? If counting the pours how do they account for pours with too much foam etc?

I think they err on the side of caution and factor that in. Better to say that the keg has 10% left when it really has 20% left, than the other way around.

I also want to point out that the beer mavens going to the Chimes to eat are going to go to the bar and find out what is on tap before they sit down, if they haven't checked it out online before they get there. The people who walk in and sit at the table without checking the beer menu first are probably just fine with wait staff recommendations...
