Clearly people don't understand what it's like to be 21, be offered a 6 figure job and on day 1 be told, you have to join the union or frick you.

I didn't. I went to the union hall and asked lots of questions before I had signed my name.
There are plenty of reasons to be in a union besides pay, but most people already know everything about unions from a Bon Jovi song.
