Considering how it pretty makes the sandwich, French Bread is very important to the overall enjoyment of a poboy or sandwich.
What is your "go to"?
For me, its Alois J. Binder.
Absolute perfection.

Agree! Many many places use it and Binders doesn't allow it to sit on shelves over 6 hours.

Dong Phuong out in the east has a killer french bread. I would put it up against any of the old line guys.

Vietnamese. The have killer Banh Mi sandwiches too. Just don't ask what's in 'em

They supply most, if not all, of the Vietnamese joints in town for banh mi bread.

The French ran Vietnam for several decades, during which time the locals got quite adept at cranking out baguettes.
The best I can do up here is Gambino's trucked in to Bergeron's. We like it, but there is no local competition.

Not the same type of French bread as Nola, but if for some god foresaken reason you find yourself in Jeanerette, LA, Lejune's has a damn fine loaf of rustic French bread.

Dong Phuong has the best French bread for sure.

Lejeunes is awesome, worth a detour. Ginger planks and bread, that's it.
In NOLA, Binders is tops.

The crust on Leidenheimer stands up well to roast beef gravy.
45 seconds in the oven warms up the middle and toasts the crust perfectly.
