Slow roasted salmon in the oven is very easy and very forgiving since it's cooked on low. Overcooked salmon is not very pleasant. Pasta is fine with salmon, but not with alfredo or something heavy. Maybe toss some grape tomatoes in some olive oil and heat for a bit with some garlic or not. Then, add the pasta and toss to coat and add some fresh basil. Top with a little fresh grated or shaved parm.
A little salad and you've got a very nice meal. I also like quinoa with salmon.
