I thawed out some purple hull peas and sausage yesterday in the fridge, but then didn't feel like cooking last night

now we have decided that we are leaving for Thanksgiving back home tomorrow, instead of early next week

I don't want to cook a big batch of peas and sausage tonight, just for them to go to waste

can I refreeze them?

I've done it a bunch and I'm still alive. That's not very scientific evidence, though.

It won't cause a food illness, but the quality might be affected. That's it.
