If he had plead not guilty he would've gone before a jury and would've been found guilty and hopefully given a long sentence.

If I killed someone in a foreign country and the judge, prosecutor, and my attorney agreed on a deal for a light sentence in exchange for my guilty plea, and then after I'd plead guilty the judge said, "Nope, now that you've plead guilty I get to put you in prison and throw away the key." I'd lose all faith in that legal system and I'd take the first opportunity to get out of that country.
That being said, Polanski is a rapist and should've done real time.
