America's Test Kitchen had a great one, but that one with roasted tomatoes looks just as good.

Roast them a good long time and I put a little chicken stock on the pan and deglazed it to get the caramelized parts off and then I poured that into the pot. I used nonstick foil which worked well.

I got a lot of kudos for it and repeat requests after I made it several times.
