Don't boil. Roast the tomatoes.
Wink's recipe is good.
I did a bacon-tomato creamy soup last week. It was a little too bacon-y, but I plan to keep the process sans bacon next time. Came out a creamy La Madeleine-esq soup.

Look at the recipe for Ina's Roasted Tomato Basil Soup My Way on Page 7 of the recipe thread. Delicious. Definitely roast the tomatoes. Much deeper flavor.

America's Test Kitchen had a great one, but that one with roasted tomatoes looks just as good.

Roast them a good long time and I put a little chicken stock on the pan and deglazed it to get the caramelized parts off and then I poured that into the pot. I used nonstick foil which worked well.
I hope you like it. I got a lot of kudos for it and repeat requests after I made it several times.

Wish I had some right now. I do have some of the roasted tomato mixture in the freezer. I made up a bunch when I had a lot of tomatoes that needed to be used. Makes a good pizza sauce or sauce for pasta, also.

Glad to hear it. I think it's definitely a keeper. When you next feel like it, get a ton of Roma tomatoes and roast them up with the herbs you like. Vac seal in packs and you can have the soup, a quick pasta or pizza sauce or put it over cream cheese, whatever...,but it's good to have around and it freezes very well.

Caramelizing and roasting the tomatoes brings out the sweetness. I didn't find that it needed any at all, but you could add roasted carrots to the mix.
