Chicken Milanese with Arugula Salad.. I have to give credit to Del Porto in Covington though, ate it once a week for lunch over the summer and decided I could make it, it's a pretty close second to theirs
Pound out the chicken breasts as thin as possible, and set aside
Make an egg wash (I eye out about two cups of milk, two eggs, add chili flakes and pepper)
Take a baking sheet and grease it (I use bacon grease)
Preheat ove to 400
In a pyrex baking dish add a few cups of italian bread crumbs, dredge the chicken breast in the egg wash and then coat with the bread crumbs and place on the greased baking sheet
Put in the over for about 20 mins, I like them crispy so I leave them in a bit longer, I usually flip them once about halfway through
Once they are done, pull them out and place on a plate. Build arugula salad on top of chicken, squeeze lemon, olive oil, Parmesan cheese, salt and pepper on top. I put sriracha around the side of the plate, but I am addicted to sriracha haha
